Papaya: it is cultivated in the tropics. Each part of this fruit is edible: skin, pulp and seeds. The ripe fruit is typically soft inside (it has the texture of butter). The inside is very good when eaten with some sugar or lemon juice. The unripe fruit should be put in a paper bag and kept in room temperature for 2-3 days to ripen faster. Papaya can be used to make jam and added to desserts, various dishes and alcohol to improve its taste. The so called "angel's fruit" is the source of beta carotene, vitamin C, calcium and iron. The seeds should be removed with a spoon, rinsed and dried. They can be used as a substitute of pepper (they have bitter and hot flavour, similar to cress) or as dietary supplement. Both juice and seeds are rich in papain – an enzyme similar to pepsin that helps protein digestion. It helps to cleanse digestive tract of intestinal deposits and has bactericidal effect. Papaya seeds are not recommended for pregnant women. The fruit is highly recommended for people after antibiotic therapy as it helps to rebuild the intestinal flora of the organism.
